Roasted Cantaloupe
The cantaloupe preparation method you’ve never tried, but should.
Ingredients
- 1 California cantaloupe, washed, peeled, seeded and cut into one-inch cubes
- whipped cream for topping
- cinnamon for dusting
- fresh mint for garnish
Preheat oven to 400 degrees F.
Place cantaloupe cubes on a baking sheet lined with parchment paper.
Bake in preheated oven for 20-25 minutes or until cubes begin to brown around the corners.
Remove from oven and let cool. Top with whipped cream, sprinkle with cinnamon, and garnish with a sprig of fresh mint.
