Cantaloupe Slab Salad

Ingredients

For the salad:

2 cups cantaloupe cubes

1 cup watermelon cubes

1 cup honeydew cubes

1 cup cucumber, peeled and cubed

1 cup cherry or grape tomatoes, halved

8 oz feta cheese, cubed

8-10 fresh basil leaves

 

For the dressing:

2 tbsp fresh lemon juice

1 tbsb honey

1 ½ tbsp olive oil

½ tsp salt

½ tsp cracked black pepper

Directions

  1. Combine watermelon cubes, cantaloupe cubes, cucumber cubes, halved cherry tomatoes, and feta cubes in a serving bowl or arrange in a flat layer on a serving platter. Top with fresh basil leaves.
  2. In a mason jar or small bowl, shake or whisk together lime juice, honey, olive oil, salt and pepper until dressing is smooth and emulsified. Drizzle dressing over salad before serving.

Yield: Serves 4 – 6
