Cantaloupe Coconut Trifle
Serving size: 8 | Prep time: 30 minutes | Fills an 8 cup trifle container or 8, 8oz jars
Ingredients:
Crumble Layer
- 1/2 11oz box of vanilla wafers (plus 8 more cookies for garnish)
- 1 cup macadamia nuts, roasted and salted
- 1/2 cup sweetened shredded coconut
Pudding Whip Layer
- 1 coconut pudding packet (3.4oz)
- 2 cups of milk
- 8oz container frozen whipped topping, thawed
Cantaloupe Layer
- 1 cup of cantaloupe, diced into quarter-inch cubes
Directions:
Crumble
- Roughly chop the macadamia nuts and set aside.
- In a large zip top plastic bag, add vanilla wafers and crush with a rolling pin, or heavy durable object, until cookies are crushed into various sized pieces.
- In a medium bowl, combine macadamia nuts, vanilla wafers and shredded coconut, and set aside.
Pudding Whip Layer
- In a large bowl, make the coconut pudding according to package.
- Fold thawed whipped topping into the coconut pudding.
Assemble
- To assemble, add a layer of crumble, then diced cantaloupe, then pudding whip to your desired dish. Repeat layers.
- Garnish with a sprinkle of crumble, diced cantaloupe and a whole cookie.
