Cantaloupe Avocado California Salad
Fresh and flavorful ingredients make this salad an instant favorite.
Ingredients
- 4 cups lettuce or spring mix
- ½ California cantaloupe, washed, peeled, and sliced into wedges
- 1 avocado, sliced
- 1/2 cup diced red pepper
- 2 Tablespoons chopped fresh mint leaves
- 1½ teaspoons white wine vinegar
- 3 Tablespoons olive oil
- 1 garlic clove, minced
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
- salt and pepper
Divide lettuce between two serving plates.
Arrange half of the cantaloupe and half of the avocado in a circular pattern over the lettuce on each plate.
Sprinkle with diced red pepper and fresh mint.
Mix together the white wine vinegar, oil, honey, mustard, and garlic. Drizzle over the salads.
Sprinkle with salt and pepper. Serves 2.
