Ancho-lime Chopped Cantaloupe Salad
A simple list of ingredients with a major kick of flavor.
Ingredients
- ½ cantaloupe, seeded, peeled and chopped
- 1 cucumber, quartered, cut into ½ inch slices
- 1 tablespoon olive oil
- juice of 1 lime
- ½ -1 teaspoon ancho chili powder
- coarse sea salt
- minced cilantro (as much or as little as you like!)
Directions
Place chopped melon and cucumber in a large bowl.
Drizzle with olive oil, and lime juice. Then add ancho chili, salt, and cilantro.
Mix all ingredients together.
Serve chilled.
