Cantaloupe and Lime Popsicles

Yields: Approximately 12 popsicles 

Ingredients:

•1 ripe @calcantaloupes (approx. 3 cups edible melon)
•zest of 1 lime
•1 cup coconut milk or other preferred milk
•2 tsp vanilla extract
•Pinch of salt

Directions:

  1. Wash cantaloupe with water and pat dry.
  2. Slice cantaloupe in half and scoop out seeds; discard.
  3. Slice or scoop out remaining fruit and add to a blender along with remaining ingredients.
  4. Blend on high for 30 seconds, or until fully blended.
  5. Pour into popsicle molds (makes approx. 12 popsicles).
  6. Freeze for at least 3-4 hours before enjoying!
