Garden Fresh Cantaloupe Cucumber Salad
A fresh medley of textures and flavors, this salad makes for a tasty snack or a lively dish for entertaining.
- 1/2 of a California cantaloupe, washed and scooped into melon balls
- 2 cucumbers, peeled into ribbons with a vegetable peeler
- 1 shallot, thinly sliced
- 4 oz. crumbly cheese
- 1/4 cup vinaigrette (1 part vinegar/3 parts oil + dried herbs such as oregano or basil)
- freshly ground black pepper
Combine all ingredients and drizzle with vinaigrette.
Toss to incorporate and coat all ingredients, sprinkle with freshly ground black pepper. Serves 2-3.
