Dolce Mint Cantaloupe Salad
Creamy coconut milk and crunchy pistachios play scrumptious supporting roles in this pleasantly sweet dessert salad.
- 1 medium cantaloupe, washed, halved
- 1 cup coconut cream or canned full-fat coconut milk
- ½ teaspoon cardamom powder
- 2 Tablespoons honey
- Chopped pistachios
- mint, for garnish
Using a melon baller, scoop cantaloupe melon balls. Place in a bowl and refrigerate to cool.
In a small bowl, add coconut cream, cardamom powder, and honey. Stir to combine and refrigerate to cool.
To serve, layer chilled cantaloupe balls with coconut cream and top with chopped pistachios and mint.
