Cantaloupe Avocado Snack

The perfect blend of flavors, textures, and nutrients comes together for a delightfully delicious healthy snack.

Ingredients

  • 1 avocado, halved and seeded
  • about 1 cup cantaloupe balls
  • 1-2 Tablespoons vinaigrette (1 part vinegar/3 parts oil + dried herbs such as oregano or basil)
  • fresh mint sprigs for garnish

Toss cantaloupe balls with vinaigrette to coat.

Top avocado halves with cantaloupe ball mixture.

Garnish with fresh mint sprig. Serves 2.
