Cantaloupe and Baked Brie
A great idea for a decadent dessert or delicious appetizer.
- One wheel or wedge of Brie cheese
- 1 cup washed, peeled, seeded and diced California cantaloupe
- Coursely chopped pistachios, almonds, walnuts or pecans
- Minced rosemary (optional)
Place Brie on a baking sheet and bake in oven at 350 degrees until soft, but not melted. (This may take anywhere from 10 to 20 minutes depending on the size of the cheese.) Remove from oven and place on a serving plate with a spatula. Spoon chopped cantaloupe over the top. Drizzle with honey to taste. Sprinkle with chopped nuts and rosemary, if desired. Serve warm with crackers or sliced baguette. Serves 4.
